The Circular Food Hub Salzburg-Bavaria is pleased to report great progress in the piloting activities conducted in collaboration with the bakery Resch&Frisch. As part of their and CEFoodCycle’s ongoing efforts to reduce food waste and improve resource efficiency, a detailed waste sorting analysis was carried out focusing on surplus baked goods generated across multiple retail locations.
Over a two-week observation period, surplus products were collected daily from five Resch&Frisch bakery shops in Salzburg. The collected baked goods were transported to FH Salzburg, where they were systematically categorized by product type, weighed to quantify the volumes, photographed for documentation purposes, and sorted accordingly. Following this process, all edible surplus goods were donated to charitable organizations, ensuring that the products remained in the food chain and supported social causes.
This initial intervention provides valuable baseline data that will inform the design and implementation of targeted food waste reduction strategies. The results will serve as a benchmark for evaluating the effectiveness of future interventions. A second round of waste sorting and analysis is planned for May/June 2025 to assess progress and further refine the measures based on comparative data.
